Six Week Bran Muffins

Even though these are muffins and are technically not that healthy, something about the word "bran" makes me feel better about grabbing one of these for breakfast. This recipe makes a ton of muffins, but luckily you can keep it in a Tupperware in the fridge and just scoop out however many you want.

1 15 oz. box bran flakes or Raisin Bran
5 cups flour
3 cups sugar
5 tsp. baking soda
2 tsp. salt
4 eggs, beaten
1 quart buttermilk
1 tsp. cinnamon (optional)
1 cup canola oil

Mix all the ingredients together in a large bowl. Let sit for at least 1 hour so the cereal gets mushy. Spoon into muffin cups and bake at 400 for 10-15 minutes (watch closely).
