I don't remember where I got this recipe from, but I use it all the time. It gives meat such a yummy flavor. I usually do flank steak, chicken breasts, or pork tenderloin. This recipe makes enough for 1 large flank steak, 2 pork tenderloins, or 4 big chicken breasts.
1 cup low sodium soy sauce
1/2 cup brown sugar
1/2 cup rice vinegar or apple cider vinegar
1/2 cup canola oil
2 Tbs. onion flakes
1 tsp. Lawry's Seasoned Salt or McCormick Montreal Steak Seasoning
Whisk marinade ingredients together, then pour into a Ziploc with meat and marinate 1-2 days.
I had this marinade on chicken last night with steamed broccoli and this rice pilaf.

Smothered Burritos
2-4 boneless, skinless chicken breasts
1 28-oz. can green enchilada sauce
1 cup red salsa (such as Pace)
1/2 cup fat free sour cream
1 1/2 tsp. ground cumin
1/2 tsp. chili powder
salt and pepper to taste
Mix all the ingredients except chicken in a crockpot. Layer in chicken, and cook on low for 6-8 hours or on high for 3-4 hours. When you're ready for dinner, remove chicken and shred. In tortillas, layer a spoonful of sauce, rice, beans, and shredded chicken. If you want to make it like Cafe Rio, place the burritos in a pan and spoon the crock pot sauce over the top, and sprinkle with cheese. Broil for a few minutes until cheese is melted and bubbly. Enjoy with lettuce and salsa on the side.
Variation:
For pork salads like Cafe Rio's, substitute the following:
3-4 lb. pork roast
1 cup brown sugar
3 cups salsa
Cook for 8-9 hours on low or 4-5 on high. Serve with rice, beans, and tortillas.

Welcome
Since I am such a dork about cooking and need all the help I can get, I have decided that this blog would be a great way to get some new recipes, share some of my favorites, and keep them all in one place for easy search and reference. I hope that there will be many contributions from all of you and that it will become a great resource for us all!
